Tasting Notes

Deep ruby red with intense garnet flashes along the rim.

On the Nose dark cherry, red plum, and wild berries layered with crushed herbs, sweet cedar, cracked walnut, and a subtle iron/sanguine undertone.

On the Palate medium-to-full body with a vibrant, savory-tinged aftertaste marked by cocoa and dried Mediterranean scrub. It is supple and generous. Sangiovese provides high-toned acidity and tension, Merlot fills in mid-palate roundness, and Cabernet Sauvignon adds structure and darker fruit depth. Tannins are fine-grained and polished rather than aggressive.
Serving: Ideal temperature 60–64°F (16–18°C), decanting 30–45 minutes to open up the bouquet.
Food Pairings: Red Meat, pasta with Bolognese sauce, wild boar pappardelle pasta, roasted lamb, or semi aged cheeses.
