96/100 JS

Tasting Notes

Deep, almost opaque ruby red with intense violet and purple highlights along the rim.

On the Nose ripe black cherry, juicy blackberry, and dark plum compote. Dried lavender, violets, and subtle herbal notes like sage and rosemary. Dark chocolate, cocoa powder, sweet vanilla, and licorice integrated with a distinct crushed-stone and graphite minerality from the volcanic porphyry soil.

On the Palate medium-to-full-bodied with a rich, velvety texture. Firm yet fine-grained and mouth-coating. Fresh, cool-climate mountain acidity that balances the dark fruit density and prevents heavy flabbiness. Exceptionally long, persistent finish dominated by dark berries, cocoa, and savory spice.

Serving: Serve slightly cool at 60–64°F (16–18°C). Decant for 45 minutes before serving to allow the dense fruit and oak tannins to open up fully.

Food Pairings: Red Meats (Braised beef short ribs, ossobuco, roasted venison, or grilled prime ribeye). Game & Poultry (Roast duck, roasted boar, or lamb chops with rosemary). Aged hard cheeses such as Parmigiano-Reggiano or mature Gouda.
