A clear, luminous pale straw-gold with subtle white-gold or even faint greenish reflections, indicating its youthful acidity.

On the nose the bouquet is complex and high-toned. You’ll find classic green apple and citrus zest (lemon and grapefruit) at the forefront. As it opens, it reveals "Meursault-lite" characteristics, hazelnut, acacia flowers, and a distinct biscuity, yeasty depth from its 12 months on the lees.

On the palate shows a vivid, spicy acidity. It is medium-bodied with a "creamy yet linear" structure. Expect flavors of ripe pear and lemon curd balanced by a savory, saline minerality. The finish is surprisingly long for its classification, leaving a clean, toasted-bread and citrus pith aftertaste.

Food pairing: The wine's balance of high acidity and creamy texture makes it versatile, particularly for dishes that need "cutting through" richness. It pairs well with Seafood & Shellfish, pan-seared scallops, grilled Sea Bass or Turbot, Oysters. Poultry & White Meats, chicken in a creamy mushroom and white wine sauce, Veal Escalope. Vegetarian & Cheese, asparagus or peas risotto. Cheese board, Comté (aged 12–18 months) or a slightly nutty cheese.

Serving: Serve this wine at approximately 12°C (54°F). If it’s too cold (straight from a fridge at 4°C), the beautiful "biscuity" aromatics will be muted. Give it 15–20 minutes in the glass to truly "uncoil."
