Tasting Notes

Clear, pale straw with faint greenish highlights at the rim.

On the Nose aromatic and high-toned. Led by bright citrus, lime zest, key lime, and fresh lemon peel, green apple, hints of ripe papaya and honeydew. Underneath the fruit lies a sharp, crushed slate, wet stone, and faint white flower petals.

On the Palate juicy, compact, and highly energized. The off-dry sweetness hits first on the tip of the tongue, but is instantly countered by a streak of electric, mouthwatering acidity. Flavors mirror the nose with concentrated green apple, white peach, and citrus juice, finishing with a salty, slate-driven mineral snap that leaves the palate feeling surprisingly dry and crisp.

Serving: Serve well-chilled at 45°F–50°F (7°C–10°C).

Food Pairing: The interplay between off-dry sweetness, vibrant acidity (~10g/L), and moderate alcohol (~9.5% ABV) makes this style incredibly versatile with food. Thai & Vietnamese. Szechuan (Spicy cumin lamb or mouth-numbing mapo tofu). Seafood (Grilled prawns, seared scallops with lemon butter, crab cakes, or raw oysters). Pork Dishes (Roast pork loin with apple chutney, schnitzel with lemon, or braised pork belly). Charcuterie (Prosciutto, salty salami, and pâtés).
