Tasting Notes

Pale lemon-gold with bright, youthful green highlights.

On the Nose vibrant green apple, lime zest, white peach, and crunchy pear. Fresh white flowers (jasmine, blossom), lemongrass, and cool petroleum/waxy citrus notes. Intense, crushed-rock slate minerality and a hint of flinty, smoky reduction from native yeast fermentation.

On the Palate off-dry (feinherb) with a flash of delicate sweetness, flavors of crisp orchard fruit, tangy lime, underripe apricot, and subtle honeycomb. High-energy, laser-sharp Saar acidity immediately balances the sweetness, driving straight through the mid-palate. Finish is crisp, lingering, and mouthwatering with a stony, saline, wet-slate mineral finish that cuts clean and leaves the palate completely refreshed.

Serving: Best serve at 45°F–50°F (7°C–10°C). Serve well-chilled to accentuate its crisp acidity and prevent the natural sweetness from feeling heavy.

Food Pairing: The off-dry balance (feinherb) and laser-sharp acidity make Barrel X exceptionally versatile. Spicy Asian Cuisine (Thai green/red curries, Sichuan peppercorn dishes, Vietnamese pho, or spicy pad Thai). Rich & Fatty Pork (Crispy pork belly, carnitas, roast pork tenderloin with apples). Fried & Salty Foods (Fried chicken, tempura, fish and chips, or potato pancakes). Seafood & Sushi (Spicy tuna rolls, smoked salmon, crab cakes, or raw oysters with mignonette). Cheeses (Soft, rich cheeses like Triple Crème Brie, Camembert, washed-rind cheeses, or mild blue cheese).
