Tasting Notes

Deep dark ruby to garnet with a distinct purple rim when tilted.

On the Nose ripe blackberry, black cherry, dark plum, and fresh blueberry. Dried violets, garrigue (wild herbal notes), and a hint of crushed mint. Cracked black pepper, graphite, wet limestone, and subtle damp forest floor.

On the Palate medium-to-full-bodied with a crisp, driving acidity that keeps the wine lively on the tongue. Tart black fruit (blackberry, sour cherry) upfront, giving way to savory undertones of black olive tapenade, dark cocoa powder, and minerality. Fine-grained, slightly rustic tannins that coat the mouth smoothly without being overly astringent. The finish is long, clean, and pleasantly dry, leaving lingering notes of dark fruit skins and spice.

Serving: Ideal Temperature 60°F–65°F (15°C–18°C). Slightly cool to the touch. Pop the bottle in the fridge for about 15–20 minutes before opening to hit the sweet spot. Decant 30 minutes before serving helping soften the fine-grained tannins and opens up its signature violet, pepper, and mineral nose.

Food Pairings: Pairs exceptionally well with grilled red meats, ribeye, skirt steak with chimichurri, roasted lamb chops, or smash burgers. Roasted Portobello mushroom, roasted root vegetables, or lentil stews. Firm, aged cheese varieties like Gouda, Manchego, or sharp Cheddar.
