92/100 VN

Tasting Notes

Brilliant light straw-yellow with pale green and silver reflections along the rim.

On the Nose citrus confit, lime zest, subtle green apple, crushed oyster shell/marine breeze, and delicate floral lift.

On the Palate medium-bodied, rich, and plush on the mid-palate with bright, zingy acidity balancing the weight. Distinct wet-stone minerality and a persistent, dry, saline finish.

Serving: Ideal Temperature 50–54°F (10–12°C). Serving it too cold will mask its delicate white flower and oyster-shell aromas. Decant for 30 to 45 minutes prior to serving will help to open up the fruits and floral.

Food Pairings: Raw oysters on the half shell, pan-seared sea scallops, scampi, or hamachi sashimi (the wine’s natural salinity and oyster-shell minerality cut through rich seafood effortlessly). Roasted halibut, sole, or poached cod with a lemon-dill sauce. Pan-roasted chicken breast or veal cutlets served with a light cream. Aged goat cheeses.

The 2023 Jean et Sébastien Dauvissat Chablis Premier Cru "Séchets" is a 100% Chardonnay from old vines on Kimmeridgian limestone slopes in Chablis, Burgundy. It balances a rich, plush texture with driving mineral precision. Lemon zest, white flowers and crushed oyster shell lead into a mouth-filling palate with racy acidity and a dry, saline finish. After 18 to 20 months on fine lees, it has real depth now, and it will keep for years, to 2036 and beyond. Vinous scored it 92 points.
