On the palate bone-dry low dosage. It’s crisp and mineral-driven with a pleasantly bitter, herbal finish that cuts through rich foods beautifully.

While standard Prosecco (Charmat method) is a "drink now" wine that fades after a year, Collfòndo is a living product that evolves.

Food pairing: because it is so dry and acidic, it is incredibly versatile:

  • Charcuterie board: Uncured ham and aged cheeses.
  • Fried Foods: Fritto Misto (fried seafood) or even fried chicken.

Fratelli Collavo's Collfòndo is a masterclass in the "ancestral" style of Prosecco. Unlike the crystal-clear, highly carbonated Prosecco most people know, this is a Col Fondo (literally "with the bottom"), meaning it is unfiltered and contains the original yeast sediment from its secondary fermentation in the bottle. This traditional approach, combined with exceptionally low sulfites and a strict zero dosage (no added sugar), results in a bone-dry, "living" that evolves in the glass. It is joyful enough for an aperitif but complex enough to stand up to a full meal, offering a textured, creamy mouthfeel that reminds you why this was the original way to drink bubbles in the Veneto.
