Tasting Notes

The wine presents itself a strong and brilliant ruby red in the glass.

On the Nose the bouquet is highly expressive, complex, and multilayered. It opens with intense, ripe fruit notes of black cherry, wild raspberry, and crushed blackberries. As it breathes, it reveals deeper complexities. Dried flower petals, violets, sage, and a fresh lift of mint or camphor. Hints of licorice, wet pebbles, and graphite. Beautifully integrated, subtle hints of toasted oak and a delicate, elegant smoky edge.

On the Palate is medium-bodied and velvety, boasting a silken texture that coats the mouth without feeling heavy. Deep black fruit intensity (black cherry, wild raspberry, blackberry) gives way to a tight, savory core packed with minerality. A vibrant, natural mid-to-high acidity keeps the rich, almost jammy fruit character perfectly taut and energized. The finish is exceptionally long, spicy, and structured, tapering off with a lingering note of licorice and a refined touch of savory graphite and well integrated oak.

Food pairing: Because the Aton Riserva combines the delicate finesse of Pinot Noir with a dense, powerful structure, it requires sophisticated dishes that match its depth without overpowering its elegance. It pairs beautifully with roasted venison, duck breast with a berry reduction, or tender loin of veal. Pheasant, quail, or a slow-roasted turkey with savory herb stuffing. Wild mushroom risotto, dishes featuring porcini mushrooms, or truffle-infused pasta. Aged, semi-hard cheeses that echo the wine’s savory, mineral characteristics.

Serving: Serve slightly cool, ideally between 60°F–64°F (16°C and 18°C). Decanting is highly recommended for at least 1 hour to unlock its full aromatic spectrum and soften the palate.
