Tasting Notes

Very pale lemon straw with a crystal clear, water white core.

On the Nose highly aromatic with notes of citrus blossoms, green apple, grapefruit, lemongrass, and crushed chalk.

On the Palate brisk and energetic. Driven by high, laser-like acidity, it features vibrant citrus layers, lemon peel alongside green pear and white peach. The finish is crisp, chalky, saline-tinged dry exit that instantly invites the next sip.

Serving: Ideal temperature is between 46°F – 50°F (8°C – 10°C). Serve it closer to 46°F (8°C) for an aperitif to emphasize its crispness, or 50°F (10°C) alongside food to allow the lemon blossom and pear notes to bloom

Food Pairing:

  • Fresh oysters, steamed mussels, or ceviche.
  • Grilled white fish, seared scallops, or goat cheese.
  • Light sushi rolls, nigiri, or crisp summer salads.
