93/100 VN

Tasting Notes

Medium straw-yellow with subtle pale gold and greenish reflections. Bright clarity with slight viscosity in the glass.
On the Nose highly aromatic and vibrant. Opens with notes of green apple, lemon zest, and white peach, backed by alpine floral aromas, crushed limestone, dried herbs, and a subtle raw almond or light nuttiness.
On the Palate crisp, precise, and electric on the entry. Driven by high, laser focused acidity balanced by a polished, textured mid-palate from barrel aging (500L neutral oak). Flavors of tart citrus, quince, and stone fruit give way to a distinct saline minerality, subtle petrol hints, and a long, dry, mouthwatering finish.

Serving: Chill to 50–54°F (10–12°C). Avoid serving ice-cold to allow its layered aromatic profile and minerality to open up.

Food Pairing: Best Pairing aged cheeses (18-24 months) Comté, Morbier, or Mont d'Or. Pan-seared fish, roasted scallops, or oysters. Roast chicken with wild mushrooms or veal cutlets in a light cream sauce. Mushroom risotto, or roasted root vegetables topped with goat cheese.

Crafted by Burgundy's famed Guillaume d’Angerville (Volnay) in the heart of Jura, the 2024 Domaine du Pélican Arbois Savagnin Ouillé showcases brilliant precision and vibrant mountain energy.

Unlike traditional oxidative Jura whites, this wine is made in the ouillé (topped-up) style, the winemaker periodically tops off the barrel with fresh wine to keep it completely full, eliminating oxygen exposure. preserving bright, non-oxidative purity and floral freshness. Crisp citrus, green apple, white peach, and subtle lemongrass balance with undertones of toasted almonds, river stones, and wet limestone. It delivers laser-focused tension, chalky minerality, and a long, saline-tinged finish.
