93/100 WS

Tasting Notes

Bright, pale straw-yellow with shimmering green-gold reflections.

On the Nose clean, taut, and aromatically chiseled. Opens with crisp green orchard fruit (quince, crunchy pear, tart green apple) and fresh citrus peel. With air, it reveals classic Chenin floral and savory undertones: crushed wet schist, dried chamomile, honeysuckle, subtle fresh ginger, and a light touch of beeswax.

On the Palate bone-dry, linear, and intensely mineral-driven. High, electric acidity immediately provides drive and tension. Firm white peach, bitter citrus pith, and lemon curd anchored by a deep stony salinity. Long, mouthwateringly saline, echoing green herbal notes, lime oil, and crushed slate.

Serving: Serve it at 50–54°F (10–12°C). Over-chilled straight from the fridge will clamp down the aromatics and accentuate bitterness.

Food Pairing:

The biting acidity, saline backbone, and structure demand foods with rich textures, gentle salinity, or aromatic depth.

Seafood & Shellfish (Seared sea scallops with brown butter and lemon, roasted turbot, cold lobster tail with herbaceous mayonnaise).

Poultry & Pork (Roast chicken in a delicate tarragon cream sauce; pan-roasted pork loin with baked apples and mustard greens).

Cheese (Mature goat cheeses, Sainte-Maure de Touraine, Valençay, Crottin de Chavignol, or aged Comté).
