Tasting Notes

Bright, pale golden-yellow color with silvery highlights and fine, persistent bubbles. The Sorting Table

On the Nose a complex bouquet of lemon, fresh baked biscuits, brioche, orchard fruits (apple, apricot), white flowers, peony, and a distinctive chalky, marly minerality.

On the Palate is crisp, full-bodied, and fresh with a creamy effervescence. It balances luscious citrus with a sharp acidity and a smooth, saline, mineral driven finish.

Serving: It is highly recommended to serve this wine at around around 50 - 54°F (10 - 12°C).

Food pairing: Its vibrant acidity and structure make it an excellent match for shellfish, crab, lobster, or raw bar selections, roasted poultry and soft artisanal cheeses.
