Intense, bright ruby red (the name Cerasuolo translates to "cherry red").

On the Nose highly aromatic and complex. Expect fresh aromas of wild strawberry, red cherry, raspberry, blackberry, plum, blueberry, carob, violet, red roses, tobacco, and vanilla mingled with licorice, wild herbs (like rosemary and thyme), and a distinct smoky, crushed-stone mineral note.

On the Palate medium-bodied and energetic. It hits the palate with a pleasant hint of juicy wild berry fruit mirroring the nose, propelled by vibrant, crisp acidity. The tannins are fine-grained, providing excellent structure. Long and savory finish, with a slightly bitter, herbal tinge and a salty mineral edge that makes it incredibly food-friendly.

Food pairing: Thanks to its bright acidity and moderate alcohol, this wine is highly versatile. Perfect match with dishes like eggplant parmigiana, caponata, or pasta with a rich tomato based ragù. Roasted chicken, grilled lamb chops, mushrooms, or smear-ripened cheeses (Taleggio, Munster, Reblochon, Red Hawk).

Serving: Best served slightly cooler than standard room temperature, around 58–62°F (14–16°C). Decanting for 30 minutes to an hour will help it open up beautifully.

COS is probably best known for their Cerasuolo di Vittoria. Organically grown and hand-harvested from vines averaging twenty-five years of age. Cerasuolo di Vittoria is Sicily's only DOCG Red, a blend of Nero d’Avola (60%) and Frappato (40%) aged beautifully in concrete and large neutral oak. Expect aromas of red cherry, blackberry, and plum followed by aromas of raspberry, blueberry, carob, violet, red roses, tobacco, and vanilla. The mouth follows the nose, a medium-bodied, pleasing crispness, driven by vibrant, mouth-watering acidity and fine tannins.
