A beautiful, soft coral pink to hazy salmon. Unfiltered and undisgorged (sur lie), so it will have a charming, natural cloudiness. 

On the nose leans heavily into bright, snappy red fruits wild strawberries, crunchy red currants, and pomegranate, zesty blood orange peel and pink grapefruit. Notes of rising bread dough due to the yeast contact. Wet stone, and dried wild herbs (like thyme or sage).

On the palate light to medium-bodied, with a dry, electric, and textured mouthfeel. The fine bubbles and yeast sediment give it a lovely weight without feeling heavy. Tart raspberry, cranberry, and sour cherry crash into a wall of salty minerals.

High, mouth-watering acidity that makes your palate instantly crave food. It finishes bone-dry, crisp, clean, and incredibly refreshing.

Food pairing: this is an ultimate gastronomic "snack" wine. It cuts beautifully through fats and salts. Charcuterie: Prosciutto, Mortadella. Seafood: Fried calamari, anchovies, or oily fish like grilled salmon. Rich Pasta: Classic Tortellini in brodo or Bolognese pasta.

Because it’s unfiltered, you can gently tip the bottle upside down before opening to incorporate the yeast sediment for a creamier texture, or pour it carefully if you prefer it a bit more clear and crisp.

Serve chilled (around 8–10°C / 45–50°F).

The Podere Sottoilnoce "Cattabrega" is a masterclass in the modern revival of historic Italian sparkling winemaking. Produced by Max Brondolo in Castelvetro di Modena (Emilia-Romagna), it is an organic and biodynamic sparkling rosé made using ancestral method.

A Rare Treasure: Uva Tosca is a historic, rare grape variety native to the hills between Emilia and Tuscany. Historically grown at high altitudes where other grapes struggled, it fell out of favor as farmers moved down into the plains. Max Brondolo is one of the few vignerons dedicated to saving it.

The wine is bottled sur lie (unfiltered and undisgorged), leaving the natural yeasts inside to create a charming, cloudy, coral-pink bubble. Light bodied, high acidity and incredibly vibrant, it bursts with notes of wild strawberries, tart pomegranate, citrus, and a distinct salty minerality.
