90/100 JS

Tasting Notes

Bright, pale pink/salmon color. Fine, persistent bubbles rather than a very aggressive mousse.

On the Nose aromatic profile is fresh, fruity and lightly floral, pear, pomegranate, lychee, red berries/strawberry, raspberry, hints of rose or orange blossom.

On the Palate dry, bright and refreshing, with lively acidity and fine bubbles. The fruit tends toward pear, pomegranate, lychee and red berry, with a lightly savory/saline quality and a clean, persistent finish.

Serving: Best serve at 43–46°F (6-8°C). Open shortly before drinking rather than allowing it to warm substantially.

Food Pairing: Its combination of acidity, bubbles, modest alcohol and red-fruit character makes it particularly versatile. Excellent as an aperitif.

Best matches, Sushi and sashimi, Grilled fish, Light seafood pasta, Grilled vegetables, Prosciutto and lighter cured meats, Mild fresh cheeses, Salads with fruit or slightly sweet vegetables.
