Tasting Notes

Bright, pale-to-medium straw yellow with slight greenish hues along the rim.

On the Nose crisp green apple, white peach, pear, and fresh lemon zest. Fragrant acacia blossoms, orange blossom, and subtle dried mountain herbs. Distinct wet slate, crushed gravel, and a touch of stony minerality characteristic of the high-altitude Valdeorras terroir. A faint, subtle note of fresh brioche or lemon curd from resting on fine lees (sur lie).

On the Palate bright, energetic, and fruit-forward with an immediate lift of tart citrus and juicy orchard fruits. Medium-bodied with a soft, round, almost velvety mouthfeel derived from neutral oak barrel fermentation and fine lees stirring, balancing out the vibrant acid. Meyer lemon, crisp pear, ripe yellow plums, and a faint savory salinity that keeps it mouthwatering. Finish is persistent, ending on a crisp minerality, lingering citrus peel, and a delicate saline touch.

Serving: Serve chilled at 48°F–52°F (9°C–11°C). Avoid serving it ice-cold directly from a standard refrigerator, as excessive cold mutes the delicate floral aromas, lees complexity, and stone fruit profile.

Food Pairing: Pairs well with Seafood (Grilled octopus, roasted sea bass, crab cakes, or oysters). Poultry & Light Meats (Roasted chicken or pork tenderloin). Cheeses (Fresh goat cheese, Chèvre or Spanish Manchego).
