Tasting Notes

Pale straw yellow with distinct greenish reflections.

On the nose prominent aromas of ripe pear, melon, and citrus zest, often accompanied by a distinct "wet stone" or flinty minerality.

On the palate medium-bodied and creamy yet very "lip-smacking" due to its vibrant acidity. You'll likely find flavors of green apple, lime, and jasmine tea.

Serving: Best served at 50°F - 54°F (10°C – 12°C). Avoid serving it straight out of a cold refrigerator as extreme cold mutes the subtle fruit aromas (pears, grapefruit) and creamy texture. Pull it from the fridge 15–20 minutes before pouring.

Food pairing: This wine pairs well with the smokiness and fat of the Speck (cured ham), and it is one of the few wines that can handle asparagus & artichokes.

Also pairs well with mushroom risotto, fresh seafood, such as oysters, steamed mussels, grilled scallops, sea bass, sushi.

The 2024 Abbazia di Novacella Sylvaner is a true "mountain wine" from one of the oldest active wineries in the world, in the Valle Isarco, Italy's northernmost wine sub-region (Alto Adige). It is dry and medium-bodied, with the freshness and energy of high-altitude vineyards. The vines grow on "moraine" deposits, a mix of mica schist, paragneiss and quartzite, and that mineral soil gives the wine its salty, flinty finish.

In the glass, ripe pear, melon and citrus zest come with a wet-stone minerality, then green apple, lime and jasmine tea. It is creamy and lip-smacking at the same time. Part of the wine is fermented in stainless steel for freshness, and part in large acacia casks for texture without heavy oak, then it rests on its fine lees for about six months.

The estate's philosophy is "varietal purity": wines that taste exactly like the grape and the soil, with minimal interference. The estate has been carbon-neutral since 1992 and farms sustainably and organically, though it chooses not to pursue official certification for specific operational reasons.

Why buy it: if you love Albariño, Chablis or Verdicchio, Sylvaner is the next white to try. It's a lesser-known grape that delivers real mineral energy at a friendly price, and it's one of the few wines that handles asparagus and artichokes.

When to open it: a seafood night with oysters, steamed mussels, grilled scallops, sea bass or sushi, or a spring dinner built around asparagus or mushroom risotto. It's also great with Speck (cured ham) on a charcuterie board, and it makes a refreshing aperitif for a warm Florida evening.
