93/100 WS

Tasting Notes

Deep, vibrant ruby-red with distinct violet and magenta rims.

On the Nose fresh dark fruits (blackberry, black cherry, sour cherry) alongside floral violets, wild field herbs, subtle spice, and a slate mineral edge.

On the Palate medium-bodied, vibrant, and energetic. Juicy dark red and black fruits are framed by tangy acidity, compact structure, and polished, fine-grained tannins. The finish is crisp, structured, and long with underlying crushed-stone minerality and subtle oak spices.

Serving: Ideal Range 58°F – 62°F (14°C – 17°C). Give a room-temp bottle about 15–20 minutes in the fridge before opening. Keeping it slightly cool accentuates its high acidity, fresh red fruit, and mineral character without highlighting the alcohol.

Food Pairing: Pairs best with dishes that balance its bright acidity, savory herbal notes, and structure. Meats (Roasted pork tenderloin, grilled lamb chops, skirt steak, or duck breast). Charcuterie (Jamón Ibérico, chorizo, and aged sheep’s milk cheeses, like Manchego. Vegetarian (Roasted wild mushrooms, lentil stews, or herb-crusted grilled vegetables).
