Tasting Notes

A bright, pale straw-yellow with subtle lemon-gold reflections. It is remarkably clear and luminous.

On the nose expect a complex nose with notes of citrus peel, white flowers, and green almond. There is often a signature "matchstick" or toasted reduction (typical of high-quality white Burgundies or modern Dão whites).

On the palate it is medium-bodied with a saline, mineral backbone. You’ll find flavors of nectarine, white peach and a long, savory finish.

Food pairing: Because of its balance between creaminess and "razor-like" acidity, it is incredibly versatile. Seafood: Lemon butter scallops, grilled octopus, or poached fish. Poultry: Roast chicken with herbs or turkey. Cheese: Semi-hard sheep cheeses (like aged Gouda.
