Gradis Ciutta Estate was born when Robert Princic in 1997 growing 45 hectares under vine, out of a total of 60, in the municipalities of San Floriano del Collio, Gorizia, Capriva del Friuli and Dolegna del Collio. Grapes used to make this wine are produced in the vineyards of Zavognza and Bukova, at an altitude ranging from 150 to 180 meters (500 to 600 feet) above sea level. Practicing the flipped cultivation (often called "soil flipping") is the practice of physically turning and mixing the soil between planting cycles. Instead of just adding fertilizer to the surface, you dig up the top layer, mix it with fresh compost or manure, and "flip" it back into the ground. Wine is obtained 100% from Cabernet Franc grapes, a vine originally from Bordeaux introduced in Collio at the end of the 19th century, with a very vigorous vegetation, where it immediately proved to be very resistant to rain and bad weather in spring and autumn.

Grapes are harvested in late period. The skins stay in contact with the juice for about 10 to 15 days (sometimes up to 20 depending on the vintage). They use a "soft press" method and conduct fermentation in stainless steel tanks until the sugars are completely exhausted. They perform manual punching down to gently extract color and tannins from the skins. Mixed Vessel Aging: As translated earlier, the wine is aged partly in barriques (small oak barrels) and partly in stainless steel.

The steel portion preserves the fresh, herbaceous, and berry-driven fruit. The oak portion adds structure, spice, and softens the tannins.

The wine is typically bottled in the summer or autumn following the harvest and allowed to rest before release.
