Deep garnet purple core.

On the Nose is rich and spicy with layers of red currant, cassis, and raspberry, underscored by hints of tobacco, coffee, and graphite.
On the Palate medium to full bodied with a silky texture. It features ripe plum and black cherry flavors, balanced by fresh acidity and "dusty" tannins. Clean and elegant on the finish with a mineral lift.

Food pairing: The wine’s "dusty" tannins and graphite notes crave fats and proteins, roasted lamb, filet Mignon with truffle butter, since this wine isn't overly "oaky," it won't overwhelm the delicate texture of a filet. The wine has a "stony" minerality that pairs beautifully with forest flavors, mushroom risotto, roasted root vegetables, beets, carrots, and parsnips caramelized with balsamic vinegar match the wine's ripe fruit and acidity. Lentil stew also a great choice for an organic/vegan-focused meal. Hard, Aged Cheeses,  Mimolette, Comté (aged 18+ months), or an Aged Cheddar. Avoid soft, creamy bries, which can make the wine’s tannins feel metallic. Cured Meats, Prosciutto or Bresaola. The saltiness of the meat makes the dark cherry fruit in the wine "pop."

Serving: Serve slightly cool at 16–18°C (60–65°F). Give it 45 to 60 minutes in a decanter.
