Abbazia di Novacella Sylvaner 2023 is a quintessential "mountain wine" from one of the oldest active wineries in the world, located in Italy’s northernmost sub-region, the Valle Isarco (Alto Adige). It is a dry, medium-bodied white wine defined by its high-altitude freshness and energy. The grapes are grown on "moraine" deposits - a mix of mica schist, paragneiss, and quartzite. This high mineral content is what gives the wine its characteristic "salty" or flinty finish.
Production philosophy focuses on "varietal purity" making wines that taste exactly like the grape and soil, with minimal interference. Carbon - neutral since 1992 and sustainable/organic farming, though they choose not to chase an official certification.
