It is a selection of first-press Pinot Noir, Chardonnay, and Pinot Meunier, with 20 percent fermented in oak barrels for the first fermentation. The dosage is under 6 g\/l, in the Extra Brut style.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThe name comes from its maturation: 36 months on the lees, then 36 more months resting in the cellar after disgorgement, for 72 months before shipment. The nose is led by citrus and opens gradually into white flowers such as orange blossom, hawthorn, and light acacia, with notes of spice, saffron, or cedar wood appearing with time. The attack is lively and enveloping, with flavors of redcurrant jelly and black fruits. The creamy texture shows slightly honeyed notes and dried fruits, and the finish is very pure, long, and generous.
